yeah, i'm from manhattan. here's what i suggest. some are utterly "scene", some are utterly "corporate". i'll go in order:
shows: here are the main acts for the bowery ballroom for aforementioned dates: 10-phoenix (sold out), 11-blue october, 12-white rose movement, 15 and 16-angels and airwaves (both sold out). other venues you might want to look up online are the knitting factory, tonic, mercury lounge, webster hall, etc.
vegetarian resturants: i love this thai place called LAND on w 82nd and amsterdam. anything with meat in it could be substituted for tofu or veggies. green curry with tofu is amazing. also there's a bunch of sushi places around and most burrito places have soy or tofu versions of all their meals.
bookstores: i use the good ol' 4 story barnes and nobles on 66th and broadway, lincoln center.
record stores: OTHER MUSIC, mondo kim's/kim's video. they have everything i need, usually.
shops: we have an assload of american apparels, then there's diesel, h&m, the apple store in soho
anything else: for movie theatres, there's the IFC, the angelika, the giant loews around 66th and broadway, lincoln center as well.
oh, and also at lincoln center: david blaine is getting out of his giant snow-globe at 10 pm on may 10th after holding his breath for 9 minutes, if that's your thing. (EDIT: IT'S THE 8TH IT'S HAPPENING)
go to central park, too. on a nice day.
seeing as you're from texas, leave the ten-gallon hat at home;) don't look up at the skyscrapers too much, or you'll be an easy target for homeless and vagabonds. keep your mean face on. put your wallet in your front pocket. and remember, the news tries to make new york seem much more scary and unsafe than it actually is.

529 West 20th Street (between 10th and 11th) 2nd Floor
It's kind of obscure and doesn't have signage out front. Last time I was there they had a showing with a piece made of a bunch of tiny spinners that mirrored your face when you looked at it.

go to the met if you're going to visit any museums... it's huge and amazing... i'm a rather big modern fan, and their modern exhibit blew me away (they have picasso's "gertrude stein", which made me giddy)
when i was there, my only other requirements were to hit stonewall (cool piece of history), cbgb's (is it closed yet? so sad)
oh, and if you're a clockwork orange fan (and over 21), there's a quasi reproduction of the korova milk bar in the east village that made me laugh :-)
